Oatmeal Banana Chocolate Chip Muffins are a fiber-rich, naturally sweetened option designed to support gut health and promote more stable blood sugar levels.

Ingredients
  

  • 1.5 cups Old-Fashioned Rolled Oats
  • 1/3 cup Brown Sugar
  • 1 Egg
  • 1/2 cup Melted Butter or avocado oil
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 Ripe Bananas
  • 2 cups Baby Spinach Optional
  • 1/2 cup Chocolate Chips

Method
 

  1. Preheat oven to 350-degrees. Line 18 muffin tins with (unbleached) muffin liners.
  2. In a high-speed blender, combine all ingredients except chocolate chips. Blend until smooth.
  3. Stir in chocolate chips.
  4. Spoon batter into muffin cups using a 2" cookie dough scoop or 1/4-cup measure.
  5. Bake in the preheated oven for 18 minutes (19 minutes if using spinach) or until a toothpick inserted into the center comes out clean.
  6. Cool completely before serving. Store in an airtight container for up to 3 days, or freeze for up to 1 month.
